This is a super delicious recipe I got from a dear friend of mine. I love it because it tastes delicious and is so versitile. My friend Lauren is a nutritionist, and I worked with her a couple of times. She helped me lose some postpartum weight! She is awesome and has tons of delicious recipes she gives her clients. Ingredients:
1/2 lb. pork breakfast sausage
½ red bell pepper, chopped
½ green bell pepper, chopped
½ onion, chopped
1/3 jalapeno seeded, chopped
8-10 eggs, whisked
Splash of milk (any type)
1 large sweet potato
½ tsp ancho chili powder
1/2 tsp cumin
1/4 tsp smoked paprika
½ tsp sea salt
¼ tsp pepper
Cooking oil spray (I use avocado oil)
Instructions:
1.Preheat oven to 400.
2. Slice sweet potato into ¼” thick rounds and some half rounds. Line a baking dish with sweet potato slices (square or round whatever you have). Spray the potatoes with a light coat of cooking oil. Sprinkle a little salt and pepper. Bake for 20 mins until soft, then remove from oven and reduce heat to 350.
3.Brown sausage in a pan. while sausuage is cooking chop up the veggies
4. Once browned add in chopped veggies and spice and cook for 3-4 mins.
5. In a bowl, whisk eggs with a little salt and pepper and splash of milk (about ¼ cup). Pour the meat and veggie mixture into the baking dish. Pour your eggs over the top evenly.
6. Baked for 25-30 mins until the middle is set and not jiggly.
Enjoy on its own or on a bed of greens. We love arugula!
NOTE: This casserole is SO easy to change flavors. Try with bacon or ham, chicken sausage, adding in different cheeses, try a garden style veggie blend, try sundried tomato and basil, the possibilities are endless.
